1 Boil water
2 In wok - 5 slices ginger, 3 sticks spring onion, raw chicken, couple tbsp of cooking alcohol
3 Pour in boiling water until chicken is just submerged
4 Turn heat high and cover with lid till bubbling (can take 5-6mins)
5 Keep on high and bubbling for 5mins
6 Turn off heat but keep wok on stove, leave for 30mins
7 Make sauce
-3tbsp chilli oil
-1tbsp soy sauce
-1tbsp black vinegar
-1tbsp sesame oil
-1tbsp sichuan pepper
-3tbsp chicken stock from wok
-sesame seeds
-spring onion
-coriander
-peanuts
8 Peel chicken off bone and add to sauce, mix
(If chicken not cooked just leave it on high until it is)
